About Old Tom Gin - Old Tom Gin (70cl) - Maple
House of Botanicals Maple Old Tom Gin was originally discovered in newspaper archives in 2010. The former bartenders have created their own variant adapted to suit modern tastes during the Research & Development stage of their Classic Old Tom Gin.
Maple Old Town Gin introduces a floral and spicy edge to accompany the prevailing juniper flavour. It was initially launched as a limited edition batch of 1112 bottles but relaunched as a permanent addition in March 2019.
For Maple Old Tom Gin the distillers at House of Botanicals use the same base gin as in their Classic Old Tom. This is distilled in London with juniper berries, angelica root, orris root, coriander seed, cassia bark, almond, orange peel and lemon peel, before being shipped to the House of Botanicals where they add saffron, chamomile flowers and spicy ginger root post distillation. Then the gin is lightly sweetened with maple syrup, at less than 25g per litre.

Tasting notes:
Nose: Juniper and bright citrus flavours dominate with an underlying note of warm spice.
Palate: bright fresh notes of juniper and pine are dominating on the palate, perfectly balanced with orange citrus, vanilla, chamomile and subtle hints of maple
Finish: long finish with a hint of butterscotch.

Old Tom style was named after Thomas Chamberlain, the distiller, and it was a very popular beverage in England back in the 1800s. For some time, Old Top has lost its popularity and the London Dry style became dominant.
Old Tom Gin is not overwhelmed with juniper influence and usually has a lower level of alcohol. To make the Old Tom Gin sweet and tasty, producers may add naturally sweet botanicals or sugars, such as muscovado sugar, refined cane sugar, maple syrup, etc. There’s as much variation in how Old Tom gin is made now, from sugar levels to the ageing process.
