Abasolo El Whisky De Mexico is the first and only corn whisky crafted and distilled from 100% Mexican ancestral corn. This is a great whisky suitable for sipping neat or for pairing with other spirits and mixers in cocktails.
Abasolo distillery (Destilería y Bodega Abasolo) design was inspired by traditional corn storage systems called "sincolotes” and it was originally used for planting and drying corn. The property consists of restored traditional buildings alongside this architecturally innovative distillery. That harmony of traditions and innovations proudly goes into every bottle of “El Whisky de Mexico.”
Creating the whisky of Mexico
Abasolo is a new world whisky made with an old-world ingredient: 100% ancestral corn. Abasolo uses cacahuazintle in the production of Abasolo whiskey. This corn only grows at more than 7,000 feet above sea level and is found exclusively in elevated valleys throughout the States of Mexico, Tlaxcala and Puebla.
Why exactly this variety? Because the higher the elevation, the harder the corn must work to survive. This means that the corn that does survive is only the strongest and richest in flavor, producing a distinct and profound taste when distilled - Abasolo.
Abasolo whisky is made using a unique traditional method of the cooking technique called nixtamalization. This method helps to receive the deepest notes of the corn. A small amount of the corn is malted and then, during the mashing process, the nixtamalized corn is combined with the malted corn. The mash is then is slowly fermented with a select yeast for more than 120 hours.
Fermented mash goes through double distillation in copper stills and then the distillate is aged in new toasted and used oak casks in an open warehouse with a light roof and no walls. Changing temperature and conditions provide a unique aging profile before Abasolo is bottled.
Abasolo whisky is a unique tipple, with deep notes of roasted corn, honey, vanilla, black tea, and leather, revealed through nixtamalization.
