World Calvados Day was launched by a planet-positive brand Avallen Calvados on October 20 in 2020, to celebrate the apple brandy from Normandy. 

Why October 20? Well, first of all, it’s right before National Apple Day (celebrated on October 21) and second of all, autumn is the most important season for Calvados production. Apples (and pears) are harvested, juiced and turned into a deliciously applelicious brandy.

How Calvados is Made?

You may be wondering what makes a true Calvados. According to French law, this name can only be worn by brandy produced in certain areas of Normandy and have the mark Appellation d’Origine Controlee on the label.

A unique bouquet of Calvados is reached through mixing sweet, bitter, bittersweet and sour apple varieties. The apple trees are initially planted in such a way that the desired ratio is obtained, and the varieties are mixed when they are harvested.

After being harvested, the apples are washed, crushed and pressed. Then they are left for a few weeks to naturally ferment. The receiving liquid is a low alcohol cider. The cider is then distilled in a column still or a pot still and  the distilled apple spirit is left to age.

Calvados must be aged in French oak casks for at least 2 years. Over time, calvados reaches saturation, matures, and its colour changes from golden to deep amber, developing aromas of vanilla, butterscotch, nut, chocolate, and spice. Then, Calvados is bottled at 40-50% ABV.
